The 11th Cookie of Christmas.
When I was growing up a staple at my grandparents house was always Ginger Snap cookies. They're super crunchy which I don't normally love in a cookie but my grandmas coffee (which consisted of 3/4 French Vanilla creamer to a 1/4 coffee) made the perfect solution. A ginger snap dunked in Grandma's coffee was the yummiest treat! Gingerbread are a staple in our house during the holidays and over the years I've made several variations but these ones have to be one of my absolute favorites! They taste just like a chewy version of a Ginger Snap cookie! But the real secret ingredient here? The cocoa powder. Who knew that cocoa powder, molasses & Ginger with a little bit of cinnamon made the perfect holiday cookie!
